Garlic Saffron Rice
Fluffy, aromatic, and packed with flavor, this is the only rice recipe you’ll ever need. It elevates any meal instantly and smells heavenly while cooking.
Ingredients:
1 cup rice (rinsed)
1/2 yellow onion, chopped
4 cloves of garlic, finely minced
1 tsp sea salt (adjust to taste)
1 1/2 cups water or broth
1/4 tsp saffron
1/2 cup hot water (for blooming saffron)
4 tbsp avocado oil
Fresh parsley, chopped
2 serrano peppers
Directions:
Bloom the Saffron: Place the saffron in 1/2 cup of hot water and let it sit for a few minutes to release its vibrant color and aroma.
Sauté the Aromatics: Heat 4 tbsp of avocado oil in a pan over medium-high heat. Add the chopped onion and sauté until it becomes slightly translucent.
Add Garlic: Stir in the minced garlic. Immediately reduce the heat to low to ensure the garlic softens without burning.
Prepare the Liquid: Add the 1 1/2 cups of water (or broth) plus the saffron water into the pan. If using, add a bouillon cube now for extra depth.
Boil: Cover the pot with a lid and bring the liquid to a boil.
Season: Add 1 tsp of salt and taste the liquid. Adjust the seasoning now to ensure the rice absorbs the flavor perfectly.
Add Rice: Stir in your rinsed rice and bring the pot back up to a rolling boil.
Simmer: Once the water begins to dry up and small "steam bubbles" form on the surface, add the chopped parsley and whole serrano peppers on top.
Final Steam: Cover the pot tightly with the lid and reduce the heat to the lowest setting.
Rest & Serve: Cook for exactly 7 minutes on low heat. Turn off the heat and let it sit for a moment before fluffing. Serve it with your Peri Peri chicken or your favorite protein!
