Grilled Peach Flatbread
The perfect balance of sweet, spicy, and savory that will have your guests begging for the recipe. Between the charred peaches and the kick from the garlic pesto, it’s a total flavor explosion!
Spicy Garlic Pesto
2 cloves garlic
1/2 lemon
1/2 cup chopped parsley
1/2 jalapeño, chopped
1/4 tsp sea salt
1/4 cup olive oil
Handful of pine nuts (optional)
Pesto Directions:
Chop: In a blender, add the garlic, parsley, and jalapeño. Pulse until roughly chopped.
Emulsify: Add the lemon juice, olive oil, sea salt, and pine nuts.
Smooth: Blend again until the pesto reaches a smooth consistency.
Store: Use immediately or store in an airtight jar.
Flatbread Assembly
1 yellow peach, sliced
Castello Creamy Havarti Cheese
Flatbread of choice
Spicy Garlic Pesto (prepared above)
Fresh arugula
Hot honey
Walnuts (optional)
Flatbread Directions:
Grill: Sear peach slices over high heat until distinct grill marks appear. Remove quickly and set on a cooling rack to prevent them from getting too mushy.
Prep: Slice your flatbread into squares and spread a generous layer of the Spicy Garlic Pesto over each piece.
Layer: Shred plenty of the Creamy Havarti over the pesto and arrange the grilled peach slices on top.
Bake: Place in a preheated oven at 350°F and bake until the cheese is bubbly and melted.
Garnish: Remove from the oven and top with fresh arugula and crunchy walnuts.
Finish: Drizzle with hot honey and a final sprinkle of shredded Havarti. Serve while hot and melty!
